Figgy Cake

A delicious moist cake featuring seasonal poached figs. This spice cake delivers a balanced mix of warm-feeling sweet fruit and nuts and topped with our house poached fig.

Ingredients

  • 1 c. Chopped Figs
  • 1 c. Raisins
  • 1/2 c. Pecans
  • 1 c. boiling water or syrup from poached figs
  • 1/4 c. butter softened
  • 1 tsp.vanilla extract
  • 1 tsp. cinnamon
  • 1/4 c. plain yogurt
  • 1 1/2 c Bread flour
  • 1/4 c Brown sugar
  • 1/2 c. sugar
  • 1 /12 t. Baking Soda
  • 1/2 t. Baking powder
  • 1/2 t. salt

Preparation

Add raisins, dried fruit, and pecans into a small saucepan with water and syrup from poached figs equalling 1 cup. Heat until boiling, turn off and set aside allowing dried fruit to soak up moisture.

In separate bowl beat butter and sugars until creamy and add one egg at a time until all are incorporated. Add in vanilla and cinnamon. Add in cooled hydrated fruits and a zest of Satsuma is always nice.

In bowl add flour, Baking Powder, Baking Soda, and Salt. Slowly sift dry ingredients into wet. I utilize a whisk until the point where i reserve 1/2 flour and the 1/2 yogurt folding in these last ingredients with a spatula.

Spoon into pans prepared with non-stick cooking spray. Bake at 250 for 20-25 min. or until golden brown.

Sprinkle lightly with powdered sugar and garnish with poached fig. Enjoy
